Weekend mornings are my favourite time to bake. I wake up before anyone else so that the place is calm and quiet. I can spread out, bake, experiment and take photos in natural light without any interruptions. This morning I made delicious pancakes for breakfast, a recipe created by my friend Jackie. I haven’t used another recipe since because these pancakes are amazing. They always come out thick and fluffy with the perfect balance of sweetness. This morning I added banana to the mix, blueberries to some, chocolate chips to others and kept a few plain and they were delicious!
What you need:
1-1/2 cups of flour
2 tsp baking powder
pinch of salt
1 cup of milk
1-2 tbsp of pure maple syrup (depending on how sweet you like it)
1 tbsp oil
1 tblsp of sugar
1 ripe banana (optional)
1. Whisk together the flour, baking powder and salt. Then add the egg, maple syrup, sugar, oil and banana (optional) and combine, slowly add the milk until it has reached desired consistency. I like when its slow to fall off the spoon. Combine until there are very few clumps.
2. Heat some butter in a frying pan on medium high.
3. Add batter to pan, at this point you can add blueberries, chocolate chips etc… cook on one side until bubbles begin to form, flip to finish off cooking process. Add more butter as needed.
4. Serve and enjoy!
